Curaçao Banana Crunch
Stars of the Caribbean -- This recipe is use on Carnival Ships
Ingredients of Banana Crunch:
1 cup
all-purpose flour
1/2 tsp
baking soda
1/2 tsp
baking powder
1/4 tsp
cinnamon
1/4 tsp
nutmeg
1/4 tsp
salt
1/4 cup butter,
softened
3/4 cup sugar
1
egg
1 cup
ripe bananas, mashed
1/4 cup condensed
milk
1/4 cup sour
cream
1/8 cup Curaçao
liqueur
1 1/2 tsp vanilla
Preparation of Banana Crunch:
Combine the dry ingredients:
flour, baking soda, baking powder, cinnamon, nutmeg and salt. Sift
twice and reserve. Cream butter and sugar by hand, using a rubber
spatula, or with a small mixer on medium speed. Add egg and mix
well untill creamy.
Blend together banana and condensed milk and add to the butter-sugar mixture, mixing well. Add sour cream, Curaçao and vanilla. Continue to mix until thoroughly blended. Gradually add reserved dry ingredients, scraping the bottom of the mixing bowl to blend completely.
Place a paper liner in a 10-inch
baking pan. Pour in batter and bake at 350°F for 15 minutes
more or until a toothpick, inserted, comes out clean.
Ingredients for Topping:
2 1/2 tbs butter
6 tbs
confectioners suger
1/2 cup cashew
nuts, chopped
1/2 cup corn
flakes
Preparation of Topping:
Melt butter in a small pan over
medium heat. Stir in sugar. Add cashew nuts and stir until
blended. Add corn flakes and continue stirring until the mixture
is light brown. Remove pan from heat. Refrigerate in a tightly
covered container until used.
